Makes three 20cm-diameter brioches


Brioche Doug

  • 230 g Strong flour
  • 230 g Pastry flour
  • 5 g Organic madagascan vanilla bean
  • 185 g Whole eggs
  • 100 g Whole milk
  • 65 g Sugar
  • 9 g Fine salt
  • 16 g Live yeast
  • 160 g European-style butter

Blueberry Cream

  • 300 g 100% Vaccinum Myrtillus Blueberry Pureé Adamance
  • 40 g Mineral water
  • 55 g Sugar
  • 25 g Gelcrem cold Sosa
  • 35 g Lemon juice

Pecan Macaroon

  • 50 g Ground pecans
  • 85 g Sugar
  • 15 g Cornstarch
  • 15 g All-purpose flour
  • 35 g Pecan Paste Sosa
  • 5 g Sunflower oil
  • 55 g Egg whites

Assembly and Finish

  • 50 g Granuled sugar
  • 50 g Raw pecan nuts
  • AN Caramelized Cantonese Pecans Sosa
  • AN 50% Pecan praliné


Assembly and Finish

  • Knead the brioche a day in advance, let it sit at room temperature for 30 minutes and refrigerate it overnight.
  • Form thirteen 25g pieces of dough into brioches.
    Roll each piece into a ball and place them in a 20cm ring with a depth of 4.5cm, which you have greased and lined with baking paper to help you take out the brioches later on.
  • Leave to rise at 84°F (29°C) for 2 hours.
    Leave for 10 minutes at 40°F (4°C).
  • In the meantime, prepare the blueberry cream and let it set in the refrigerator.
    Make the pecan macaroon and set it aside in the refrigerator.
    Use a piping bag without a nozzle to pipe 6g of macaroon onto each brioche and sprinkle with a half-and-half mixture of granulated sugar and chopped pecans.
  • Bake at 310°F (155°C) for 25 minutes until baked evenly (check the brioches reach 201°F (94°C) in their middles).
    Leave to cool and fill each brioche with 10-12g of blueberry cream.
  • Decorate by sprinkling confectioner’s sugar or decorative snow on the top of the bun.
    Use some pecan praliné to help you stick a Cantonese pecan nut on each brioche ball.
