Strawberry and Buddha’s Hand Cream Gel

In this preparation, the Chef Martin Lipoo has chosen to use Gelcrem Cold, a thickener that provides a creamy texture without any fuss.

Ingredients
  

  • 100 g Strawberry puree 100%
  • 10 g Lemon juice
  • 20 g Simple syrup
  • 4 g Buddha hand zest
  • 14 g Gelcrem Cold Sosa

Instructions
 

  • Put all the ingredients into a jug.
    100 g Strawberry puree 100%, 10 g Lemon juice, 20 g Simple syrup, 4 g Buddha hand zest, 14 g Gelcrem Cold
  • Mix using a hand blender for 2 minutes.
  • Cover with cling film.
  • Let it rest for 2 hours in the refrigerator.
  • Mix using the hand blender again.
  • Put into a squeeze bottle.
