Savory Pistachio Nitrogen Wafers
Ingredients
Pistachio Foam
- 230 g Whipping cream 35% fat content
- 130 g Pistachio paste Sosa Ingredients
- 1 g Fine salt
- 100 g Egg white
Equipment
- 1 Siphon
- 1 Load
- 1 Liquid Nitrogen
- 1 Cookie Stamps
Instructions
Pistachio Foam
- Heat the cream to 70ºC. Put in a jug with the pistachio paste and salt. Homogenize using a hand blender.230 g Whipping cream 35% fat content, 130 g Pistachio paste, 1 g Fine salt
- Add egg whites and mix again. Strain finely and put into a 1/2 a liter siphon. Add one gas charge for cream.100 g Egg white
- Let it rest in the fridge at 4ºC for 2 hours before using.
Nitro-waffers
- Freeze two metal cookie stamps with liquid nitrogen. Make a circle of foam on one of them.
- Press on it with the other stamp andlet it freeze for 6-7 seconds.
- Keep it in the freezer at -18°C orserve this iced snack immediately on a frozen support.
